Watermelon Seeds with Licorice Recipe
Ingredients:
- Watermelon seeds: 500g
- Peanut oil: 10g (divided into three portions of 3g each)
- Salt: 25g
- Licorice: 3g
- Quicklime: 50g
- Fresh water: 650ml (500ml for soaking, 150ml for the syrup)
Method:
1. In a large bowl, mix quicklime with 500ml of fresh water until fully dissolved. This creates lime water. Add the watermelon seeds and let them soak for 4 to 5 hours. After soaking, rinse the seeds thoroughly with clean water and carefully remove the thin mucous membrane from the shells.
2. In a pot, combine salt and licorice with 150ml of clear water. Bring it to a boil over medium heat and let it simmer for 10 to 15 minutes. Strain the mixture to obtain the licorice-infused salt solution.
3. Heat a wok over low heat and add 3g of peanut oil. Once the oil is warm, add the rinsed watermelon seeds and stir-fry gently. Continue cooking until most of the moisture evaporates. Then add another 3g of peanut oil and stir well. After the seeds are fully cooked, add the third portion of 3g peanut oil and continue frying briefly to ensure even coating.
4. Transfer the fried watermelon seeds into the licorice salt solution. Cover the pot and let the seeds soak for 1 to 2 hours. This allows the flavors to penetrate deeply.
