Regarding the current form of food safety in China, Yang Yongtan talks about implementation measures from the guiding policy to the serious problems facing food safety. Although China has strongly supported the issue of food safety regulation at the government level, there are still some challenges. Yang Yongtan said, "Due to historical reasons, China's food source pollution is serious, the process control ability is weak, and the lack of supervision and support capacity has not been completely solved. The identification and toxicity mechanism of food safety hazards and the migration and transformation of hazardous materials in food raw materials are carried out. And the safety control mechanism needs to be further studied; in the food production, storage, logistics and other links need to strengthen the process control, inspection and testing, monitoring and evaluation, supervision and emergency technical research, food safety rapid detection reagents and equipment localization rate research is very critical Therefore, food safety issues have both opportunities and challenges for food safety workers.

In the analysis industry, almost everyone knows that pesticide residues, veterinary drug residues, food additives, mycotoxins, benzopyrene and polycyclic aromatic hydrocarbons, plasticizer additives, trans fatty acids and other toxic and harmful substances are frequently concerned. They are all solved by gas chromatography, liquid chromatography or chromatography-mass spectrometry; some nutrients such as fatty acids, triglycerides, vitamins (including water-soluble and fat-soluble), and sugars are also analyzed by chromatography or Chromatography-mass spectrometry is used as an analytical tool.

“We have learned that some of the governing units (including universities, research institutes, central enterprises) and some other third-party testing professional organizations have configured a large number of chromatographic instruments (or chromatographic-mass spectrometers) for their testing projects and tasks. The related instrument companies have also invested a lot of manpower and financial resources. While promoting the instruments, they have developed new testing technologies based on customer needs, and formed a complete set of application solutions, which also improved the technical level of food safety guarantee. But relatively speaking, The food industry is a relatively low-margin industry, and it is difficult for grassroots food companies to allocate expensive foreign chromatographic instruments." Yang Yongtan said. How to adapt the chromatographic technology to the "low profit" of the food industry, Yang Yongtan said: "In recent years, with the country's generous investment in scientific instruments, the gap between the technical level of domestic chromatographic instruments and foreign instruments is constantly narrowing. And because of its certain price advantage, it will play a greater role in the safety and security of the food industry."
